Dining out and home cooking, we enjoyed our year. Now, with the Pandemic raging, we'll be doing lots more social distancing and self quarantine. Charcuterie, and the world of Italian Cold Cuts. Italian cold cuts are often made from pork: salami, prosciutto, salsiccia, finocchiona, pancetta, and so on, which are collectively referred to as salumi. In the past, these were all made when hogs were butchered in late fall or early winter and set aside to guarantee a supply of meat during the warmer months when uncured meats would spoil rapidly. Since their names vary considerably from place to place within Italy, we'll begin by saying what these terms mean in Tuscany: Checkout an interesting article. We've been doing lot of grilling and smoking, and there's no end in sight! We sold our mansion, and downsized our life. Now, with almost no maintenance, we've got time to enjoy life more. And so, we're taking the easy way out and have signed up for Fresh Meal Delivery! In days gone by, we spent lots of time and effort doing the shopping and chopping for all of our family and friends. Now, we're only cooking for us and only when the mood strikes us. We'll be doing lots of grilling and smoking this month, watch for our updates! Tried Senior Living, but not our cup of tea. Bought a new home, and we move in on April 3rd, just in time for Paulina's Birthday. Got a new Cuisinart Hot Air Fryer and I'll be adding lots of new dishes to our new Playlist. Watch for updates. We downsized our home but not our lifestyle. In years past, we hosted our family and friends. Now, we're more into the simple life. The air fryer allows us to make lots of our favorite meals, quicker and healthier. Checkout some of our favorite dishes. Ain't nothing as good as making lots of family favorites, and I'll be doing some Wings for Paulina .. Adobo style. Then, it's time to do all the rest. I'll be adding lots of new items to my new YouTube Playlist. Love dining out and dining in, and often I want to save the recipe and video. Like most, I have lots of recipes and videos. My favorite chef's include Linda Vitale and Pasquale Sciarappa. Until now, I collected and shared many of my YouTube recipes here at Papa's Recipes! I even created lots of home video slideshows which include our "happy meals". Taking it to the Next LevelAs a developer, I created my own Recipe Application. This is a live application on my server, which will be used to add more recipes. This includes the ability to link to YouTube or other online locations. I suggest you check it out. This includes full admin privileges so you can do it all, i.e., view, change, add, product pdf, and decide if it fits your needs.
I have even created a "Souz Chef" .. that is the business assistant "Starting Point". This can be used by commercial chef's for business purposes. In addition, I have a FREE download of the original editions which can be used on an iPad or iPhone so you can "roll your own"! I'm now in the process of upgrading these apps, and will be replacing and adding lots more. I will post again when it's time for the new editions. Meanwhile, stay the course and stay safe! Regards, John Now Approaching my 75th year, and still woking on making life better. Until now, I really didn't give much thought to food .. This week I've been thinking about working on my health and diet. So, thanks to my family and doctor, I've been reading a lot about Vegan and Onish diets. It seems that I now enjoy lots of good things that are in fact also good for me. However, I also learned that many foods I love don't love me! Paulina, John, Sunnie and even my doctor have been helping me see the "real cheese". My son has especially been urging me to think Vegan and the Onish diet. It seems, it's possible to pick the best from both diets. And continue to make my favorite foods. So, I'm setting my goals now to simply take care and eat better. Today, I woke up and switched from Coffee to Green Tea. Later, I'll be eating cottage cheese with blueberries and rasberries. And, dinner .. Italian as you may have guessed.
